The close
relationship between Alessio Tessieri and the plantations, the
cocoa producers and his agronomists has led him to the discovery
of this cocoa bean, truly one of “mankind’s treasures”, a kind
of almost-extinct “reliquary”. It comes from small plantations
in Venezuela producing 3,000 kilos of cocoa beans, from which
Amedei makes 20,000 packs which are unique in the world: the
“Porcelana” (porcelain). It is a genetically pure criollo bean,
called “Porcelana” because of the translucent white colour of
the bean, which produces a very clear chocolate, 70% fondant.
It is a type of cocoa bean which goes far beyond the idea of
chocolate as the world market usually thinks of it: it is an
intense chocolate of extraordinary strength but at the same
time with a tantalising delicacy, and with an acidity which
imparts freshness, leaving the mouth completely clean and immediately
wanting to try some more. It has a decisive flavour of roasted
almonds which alternates with hints of olive oil as in a hard-working
oil mill. A unique experience, a flavour which lingers, long
and persistent. |
